Wyau Ynys Mon di Sylvia Garda
Don’t worry, just the title is strange! ( it means Anglesey eggs in the local language).
INGREDIENTS:
!1 1/4 lb potatoes/6 medium sized leeks/3 oz butter/1 tablespoon flour/half pint hot milk/2 oz plus 2 tablespoon grated cheddar (or other cheese)/8 hard boiled eggs, shelled and quartered/salt and pepper
Boil the potatoes, peel them and mash them in a puree; chop roughly the leeks (first wash them of course) and stew them gently with the butter and some water keeping the lid on, when cooked crush them in their own cooking juice. In the meantime prepare the sauce: melt the butter in a small pan and stir with the flour, cook for 2 minutes.Stir in the milk and cook again for 10 even 20 minutes. Amalgamate the potatoes and the leeks with the remaining butter,add salt and pepper. The mixture should be light and of a beautiful tinge of green.Put it around the edge of an oval oven proof dish,put the eggs in the middle. Add the 2 oz of cheese to the sauce and pour over the eggs. IF YOU LIKE IT ADD SOME GRATED NUTMEG: Scatter the remaining cheese on top and bake in a hot oven until golden brown. (180° for 20 minutes or maybe a little longer but keep checking) Here you are!
If you want you can serve with “fingers” of cold ham. Enjoy!
